Shoulders bump, glasses clink and Gennaro's Bolognese is on every table. Welcome to Bolo by Gennaro, our small, buzzy trattoria in the heart of Soho. We're looking for a Chef de Partie to help lead our small, busy kitchen.
Who we are
Brava Hospitality Group is the home of great restaurant brands. We're the group behind Prezzo Italian, Jamie's Italian, Riding House Café, Nessa, Yasmin, Mortimer House Kitchen and our newest opening, Bolo by Gennaro. We're growing the footprint of every one of our brands, which means real opportunities to grow with us.
Bolo is Gennaro Contaldo in restaurant form. Created with Brava and the Jamie Oliver Restaurant Group, it's Gennaro's first London restaurant in almost 20 years, built on passion, big hugs and seriously good food.
Named after Gennaro's signature Bolognese, Bolo is a 32-cover trattoria where nobody leaves hungry. The menu is short because we know what's good: six fresh pasta dishes, from The Original, tagliatelle with pork and beef ragù, to Limone, tagliolini with Amalfi lemon butter and mint, plus antipasti like our bolo arancino and ricotta doughnuts to finish. Simple food, made brilliantly.
The role
As Chef de Partie, you support the Head Chef . You'll work on the line, keep the team organised and make sure every dish, from The Original to the Limone, is cooked exactly as Gennaro intended.
At Bolo, it all comes down to two things: the impression we make and the connections we build. Every guest should feel welcomed, looked after and like they've been invited to Gennaro's table. That big-hearted hospitality starts with how we treat each other. A team that looks out for one another, has fun together and takes pride in every plate creates the moments guests remember.
What you'll be responsible for
Cook every dish consistently to spec, including fresh pasta and sauces.
Support the launch of new dishes and specials.
Help with stock rotation, GP and waste.
Keep standards high on food safety, allergens and cleanliness.
What we're looking for
Experience as a Chef de Partie.
Excellent technical cooking skills, ideally with fresh pasta.
Calm and clear communication when it's busy.
Happy to get stuck in as part of a small, close-knit team.
Understanding of GP, stock and kitchen costs.
Available to work a mix of days, evenings, Saturdays and Sundays.
Born for Bolo?
You believe in simple food, done brilliantly. You'd rather cook six dishes perfectly than sixty dishes well. You take pride in a silky ragù, pasta cooked just right and a calm pass when the room is full. You thrive on the joyful chaos of a small, packed Soho kitchen, and you want every guest to leave happy, full and already planning their next visit.
What's in it for you
You'll give a lot to this role. Here's what we give back.
