Relocation assistance or temporary staff accommodation available
£40,000-£50,000 per annum plus annual performance bonus and fantastic benefits
45 hours per week over 5 days, including rotational weekends

Our Butchery Operations Manager

We are looking for an experienced butchery operations manager to lead the day to day operations of our butchery facility - managing a team of 9 across raw production, cured and cooked production, packaging and hygiene. This role is a key hire in our business so not only do we need an experienced butcher who is used to block work and can train and nurture their team, but is also adept at writing production plans and schedules to fit with requirements of various customers. You will need to be a organised clear planner to ensure correct stock levels at all times and you will be used to talking with customers ensuring the whole carcass is utilised. You will oversee the development of new products (a particular focus on cured and cooked products). This is one of a kind role in a world leading facility.

What we’re looking for

  • Strong butchery experience, whole carcass breakdown, high level of finished product
  • Leadership and organisation
  • Production planning and scheduling
  • New product development
  • Impeccable food safety standards, full and rounded understanding of HACCP and the highest food safety standards
  • Experience of running  a large scale production facility, charcuterie experience a plus
  • HACCP committee experience ideally
  • Experience of supplying retail/restaurant and direct to consumer meat products
Where you'll be working

The Newt Butchery is at the centre of our food production, sourcing beef, lamb and venison, direct from our farm, and pork and poultry from local farms. In June of 2023 the butchery department moved into a brand new state of the art facility, blending raw production, cured an cooked meat production and a visitor attraction hosting workshops and inspiring guests and customers with our nose to tail whole carcass butchery approach. Our aim is to become the leading whole carcass butchery operation in the country. Buying only whole carcass and using the whole animal. We supply our own internal customers from retail to various restaurants, giving us a unique opportunity to utilise everything we buy, the butchery facility has had national press recognition for its design.
