Role Overview
The Director of Food & Beverage (F&B) will oversee all aspects of food and beverage operations at Casa Madera, ensuring seamless delivery across the restaurant, the Mondrian Hotel partnership, and internal staff dining operations. This role requires a strategic and operational leader capable of managing multiple revenue centers, building strong relationships with hotel partners, and driving service excellence throughout all areas of F&B.
Key Responsibilities
Restaurant Operations
Oversee all daily operations of Casa Madera, ensuring consistency, quality, and adherence to brand standards.
Lead, mentor, and develop F&B management teams, including front-of-house and back-of-house leadership.
Manage staffing, scheduling, and labor costs across all restaurant operations.
Implement operational policies, procedures, and systems to optimize efficiency and guest satisfaction.
Hotel Partnership Management
Act as the primary liaison for the Mondrian Hotel, managing morning coffee service, in-room dining, and cafeteria operations for staff dining.
Ensure high-quality service, timely delivery, and brand consistency across all hotel F&B offerings.
Collaborate with hotel management to anticipate guest needs and drive innovative service solutions.
Financial & Performance Management
Develop, manage, and monitor departmental budgets and financial performance metrics.
Drive profitability through effective cost management, inventory control, and revenue optimization.
Analyze F&B performance, identify opportunities for growth, and implement action plans to improve results.
Guest Experience & Brand Standards
Champion exceptional guest experiences and uphold Casa Madera’s high service standards.
Monitor guest feedback, identify trends, and implement improvements to enhance satisfaction.
Ensure compliance with health, safety, and sanitation regulations across all F&B operations.
Qualifications
Bachelor’s degree in Hospitality Management, Business, or related field; equivalent experience considered.
Minimum of 7–10 years of progressive F&B leadership experience in high-volume, full-service, multi-concept hospitality environments, including hotels or resorts.
Proven track record managing multiple revenue centers, including restaurants, room service, and staff dining operations.
Strong leadership, coaching, and team development skills.
Exceptional financial acumen and ability to drive profitability.
Outstanding interpersonal and communication skills with the ability to build and maintain relationships with hotel partners, team members, and guests.
Flexible and adaptive with a hands-on approach in a fast-paced environment.
