Set in a stunning East London location, Canal has quickly made its mark as a warm, buzzing space built on creativity, confident hospitality, and a passion for great food and wine.
We’re now looking for an experienced and inspiring Senior Sous Chef to take a leading role in our talented kitchen team. This is an exciting opportunity for a chef who combines creativity with strong operational know-how and thrives in a fast-paced, quality-driven environment.

As Senior Sous Chef, you’ll be the Head Chef’s right hand, leading the day-to-day running of the kitchen, ensuring consistent excellence in every dish, and driving standards across prep, service, and people management. What You’ll Be Doing
Leading with Confidence: Oversee daily kitchen operations, taking full responsibility in the Head Chef’s absence and ensuring quality, consistency, and pace throughout service.
Menu & Development: Collaborate closely with the Head Chef to design, develop, and refine dishes that celebrate the seasons and champion bold, balanced flavours.
Team Leadership: Inspire, train, and develop the kitchen team, fostering a positive, learning-focused culture where people can grow.
Operational Excellence: Manage prep, ordering, rotas, and kitchen organisation to maintain smooth, efficient service.
Quality & Consistency: Uphold exceptional standards across all dishes and ensure consistent delivery that reflects the Canal ethos.
Financial Awareness: Support with stock control, food costing, and GP targets to balance creativity with commercial success.
Health & Safety: Oversee hygiene, allergen, and food safety compliance, ensuring a safe and professional working environment.
Cross-Department Collaboration: Work closely with FOH and management teams to deliver seamless guest experiences.
What We’re Looking For
Proven experience as a Sous Chef or Senior Sous Chef in a high-quality, fast-paced kitchen
Deep understanding of seasonal, European-inspired cooking and ingredient-led menus
Strong leadership and communication skills, able to inspire, support, and challenge your team in equal measure
Highly organised, calm under pressure, and confident in leading service
Skilled in menu planning, costing, and kitchen operations
A hands-on, collaborative approach - leading by example and setting the tone for professionalism and passion
