After re-opening in April of 2019, Captain Whidbey has received incredible press and accolades from Sunset Magazine, Vogue, CondeNast, Portland Monthly, Domino and many others.

We are now looking for a creative, hard working Executive Chef/Dir. of F&B to join our team with the focus of taking our F&B program to even greater heights.

Located on the shores of Penn Cove on Whidbey Island (just a 2 hour drive from Seattle), in the heart of Ebey’s Landing National Historic Reserve, Captain Whidbey has provided legendary island hospitality and dining for over a century. Join us for a meal in the historic dining room or bar or an alfresco meal on the islands best patio, overlooking Penn Cove. We believe in locally sourced, full flavor cooking focused on island grown and regionally sourced farm fresh products. Purpose of Position

Responsible for supporting and improving upon our F&B concept with a focus on taking it to the next level both quality, presentation, service and overall experience. Responsible for the running of the culinary program at Captain Whidbey including all weddings and events.

FOOD & BEVERAGE
We are looking for a culinary leader who desires to buy local when possible, someone who can create and/or produce a menu that is “passionately local and hyper-seasonal”, someone that understands the dynamics of a hotel, outdoor events, pleasing the local demographic base while creating something new and worth traveling “off the beaten track” to visit for guests from Seattle, PDX, Palm Springs, Canada and other feeder markets.
A fun menu that doesn’t take itself too seriously (but takes the food seriously).
Spring/Summer/Fall/Winter takes on the fun coastal vacations of the past kind of vibe; casual, accessible, light and fresh fare.
Pacific NW seafood fare, honoring all regional traditions and celebrating the incredible bounty of the near sea. We are Penn Cove Shellfish.
Our obsessive focus is on Oysters, Mussels, and Clams.

The Restaurant and Bar
Our “living room style” restaurant and dining room reflect Captain Whidbey’s warm and casual approach to hospitality. As our central multi-use space, the custom and eclectic tables and banquettes at the restaurant at Captain Whidbey are as suitable for an exquisite house-made meal as they are for sketching, writing, watercoloring or sparkling conversation.
The restaurant is helmed by YOU, our menu veers towards rustic and hearty, with inventive shellfish dishes, breakfast boards, local produce from our garden, house-smoked meats, house-cured pickles and salmon, homemade bread, jam and other delicacies.
On the North Side of the restaurant, you’ll find our bustling back deck. With sweeping, sunlit views of Penn Cove and beyond, the waterfront deck is an iconic Whidbey Island destination. Enjoy mussels from Penn Cove or a cocktail from the bar and stay awhile — the deck is open late

Position Mission/Overview

The Executive Chef/Director of F&B is responsible for directing and overseeing the entire food service operations, throughout the property. Provide the optimal service possible while operating within predetermined budgetary guidelines and/or limitations. This position is responsible for providing overall leadership in the creative development and quality assurance in culinary operations. This includes directing product conceptualization, menu engineering, recipe development, item costing, concept testing, and product specification development/sourcing, implementation of new menus and on-going quality assurance processes and systems. The Executive Chef/Director of F&B will promote and facilitate an interactive leadership role for the established culinary departments. He/She will focus on supervising and supporting the day-to-day activities in the kitchen by delegating authority as needed, rolling up his/her sleeves and performing the duties them self, assigning and prioritizing activities and monitoring operating standards. The Captain Whidbey Executive Chef/Director of F&B will be effectively engaged in the communities; successfully promoting the restaurants and other F&B offerings.

Education/Vocational Experience

The education, specialized training, required licenses or certifications and/or years of directly related experience required to enter this job:
>2 or 4-year culinary degree preferred.
>Minimum 5+ years management experience in the hotel and/or restaurant industry.
>Local Seattle and/or Portland Oregon restaurant experience a plus
>Minimum of 3 years experience in the Executive Chef position
>Nationally recognized, advanced food service sanitation training course certification, permits, and licenses as needed.

Position Reports To: Hotel GM with a dotted line to CEO of The Q Hotel Group

Positions Reporting To Executive Chef: All hourly kitchen team members including dishwasher, line cooks/prep cooks, sous chef, Restaurant Manager

Salary: DOE- to be discussed during pre-interview

Bonus or Incentive Plan: Yes

Relocation: Negotiable, however, preference will be given to those candidates who are in the PNW market and specifically in the San Juan Islands or in the Whidbey Island vicinity. Lodging provided as needed during transition to our location.

Benefits: 401K plan, incentive plan, 11 days Paid Time Off (starting 1st year), management shift meal, crazy discounted employee hotel rates of $50/night at Captain Whidbey (as of now), F&B discounts of 50%, others to be discussed during pre-interview with QHM.
