We're looking for ambitious leaders who are excited to build something from the ground up and help establish the standards that future Cholapink restaurants will follow.
Position Summary
The Kitchen Manager partners closely with the Head Chef to oversee the daily operation of our flagship kitchen. This position is ideal for an experienced Kitchen Manager, Sous Chef, or similar culinary leader looking to help build a chef-driven concept from the ground up. You'll lead production, scheduling, inventory, food quality, sanitation, and team development while helping establish the systems and standards future Cholapink restaurants will follow.
Responsibilities
Lead daily kitchen operations and service execution.
Schedule, train, coach, and develop the BOH team.
Manage ordering, receiving, inventory, and food cost controls.
Ensure recipe consistency, prep standards, and quality execution.
Maintain food safety, sanitation, HACCP, and Department of Health compliance.
Support hiring, onboarding, and performance management.
Partner with the Head Chef to build scalable kitchen systems and operating procedures.
Monitor labor deployment and kitchen efficiency.
Build a positive, accountable kitchen culture.
Qualifications
3+ years in a kitchen leadership role (Kitchen Manager, Sous Chef, or similar).
Strong culinary, organizational, and leadership skills.
Experience with scheduling, ordering, inventory, and labor management.
High-volume restaurant experience preferred.
Opening experience highly desirable.
Peruvian or Latin American cuisine experience is helpful but not required.
Additional Requirements
A valid NYC Food Protection Certificate is required upon hire. Candidates who do not currently hold the certification must obtain it before their first day of employment.
Must be legally authorized to work in the United States.
Must be able to work a flexible schedule, including evenings, weekends, and holidays.
Must be able to stand for extended periods and occasionally lift up to 50 pounds.
