Role Overview:
As a Pastry Line Cook at Chotto Matte San Francisco, you will play a critical role in crafting desserts that match our high culinary standards. You’ll work closely with the Chefs and kitchen team to execute our signature sweets with consistency, precision, and flair. This is a hands-on role perfect for someone with a strong pastry foundation and a passion for delivering artistic, flavorful desserts in a high-volume, fine dining environment.
Key Responsibilities:Prepare and plate all desserts and pastry items according to Chotto Matte’s recipes and presentation guidelines.
Assist in the daily prep and production of pastry components, sauces, and garnishes.
Maintain cleanliness, organization, and compliance with food safety and sanitation standards.
Ensure consistent quality, portioning, and timely execution during service.
Support inventory rotation and assist with ordering to ensure freshness and minimize waste.
Collaborate with the culinary team to develop new ideas and improve existing dessert offerings.
Follow all kitchen procedures and safety protocols.
Participate in training and team meetings to support ongoing development.
Stand and walk for extended periods (up to 8–10 hours per shift).
Frequently bend, kneel, reach, and crouch for ingredients and equipment.
Use repetitive hand and arm motions for tasks like whisking, rolling, and piping.
Lift and carry up to 50 pounds; occasionally assist with heavier loads.
Work around hot ovens, sharp tools, and in varying temperature zones (e.g., freezer, kitchen line).
Wear PPE as required by Cal/OSHA (e.g., non-slip shoes, gloves, aprons).
Maintain focus and visual accuracy for precise plating and safety awareness.
Preferred Qualifications:
Minimum 3–5 years of pastry experience in a professional kitchen or fine dining environment
Familiarity with Japanese, Peruvian, or Nikkei-style ingredients and techniques is a plus.
Knowledge of modern and classic pastry techniques (baking, tempering chocolate, etc.)
Strong attention to detail and ability to follow recipes with precision.
Excellent time management and organizational skills in high-volume service.
A positive attitude, a team-oriented mindset, and clear communication.
Availability to work evenings, weekends, and holidays
