The Newt in Somerset has ancient woodland, historic gardens and far reaching views. It is a unique destination with Hotel, Spa, Restaurants and much more.  Visitors can take a tour of the gardens, deer park and cyder press, dine in the Garden Café and visit our farm shop. Expecting to attract some 150,000 visitors per year, The Newt in Somerset is a vibrant and thriving attraction, animated throughout the seasons by special events, workshops and education programmes.



Department Description


Food & Beverage is at the heart of the Estate and encompasses a multitude of venues including the Botanical Rooms, Garden Café, Bakery, Cyder Bar, Gelateria & Story of Gardening Museum. As our Estate grows, we have plans to enhance and increase our offering with prime focus on creating special culinary experiences, inspired from the land around us. Our kitchens forge close relationships with our farming and production teams and source local artisans to create truly unique products and dining experiences here in Somerset.

 

The Fish department is a newly developed area at the Newt, we are in the process of building a bespoke fish mongers, to service our restaurants. This business within a business will manage and develop fish for our restaurants and customers, Sourcing, preparing. As with all our food our aim is the highest quality fish with a story we know and understand, we want to work with people who share our values and show off their craftmanship and quality.



Position Summary


We are now recruiting for an experienced and highly professional, forward-thinking and commercially aware Fishmonger to  oversee and develop the Fresh seafood offering from the newt. The successful candidate will also need to be a team player, creative, and meticulous with a business. A forward thinking fishmonger and business owner with the entrepreneurial skills to push this part of our business to the next level, you will mange all aspects of the fish project from sourcing to preparation and driving sales both internally and externally.



Key Responsibilities:


  • To oversee the smooth running of the fresh fish, cured fish and shellfish operation
  • To prepare all the fresh fish for the counters, hotel, restaurant and Mobile newt home delivery
  • To prepare shellfish for all the above
  • To be strong robust supply chains and relationships with fishermen and other suppliers
  • To engage with the customers in a friendly and polite manner and offer advice on cooking suggestions, to develop new routes of sale and grow the business
  • To source suitable innovative products, maintain supplier relationships, and cost-effective ordering on fish
  • To maintain the gross profit margin, in line with business
  • To liaise with the Kitchen and Front of House staff to promote and ensure the smooth running of the fish counters;
  • To work in a responsible, safe and professional manner at all times;
  • We are committed to building and maintaining new and existing supplier chains and as such you will be a key player in the forward movement of our product line

  • Previous experience in a similar operation
  • Fish prep and care
  • Entrepreneurial spirt and drive  
  • Ability to work under pressure in the public eye
  • Confidence in talking to others
  • Good attention to detail
  • Great time management and self-motivated
  • Passion for food, beverage and luxury hospitality
