OVERVIEW
As a Junior Sous Chef at HAM, you will play a key supporting role in daily kitchen operations, working closely with the Sous Chef and Head Chef to ensure the smooth execution of service, culinary excellence, and a collaborative team environment. You will contribute to maintaining high standards of food quality and safety, while actively participating in training and mentoring junior kitchen staff.
KEY RESPONSIBILITIES
Culinary Execution & Kitchen Operations
Assist in the preparation, execution, and presentation of all dishes to the highest standards, maintaining consistency in quality and taste.
Support the Head and Sous Chefs in developing new menu items and seasonal specials, contributing ideas that align with the brand’s ethos.
Ensure compliance with food safety, hygiene, and sanitation standards, including full adherence to HACCP procedures.
Uphold and help enforce kitchen standards, recipes, and plating guidelines to maintain brand consistency.
Monitor prep levels and contribute to effective mise en place and efficient service during peak periods.
Leadership & Team Development
Act as a role model to junior team members by demonstrating professionalism, positivity, and attention to detail.
Assist in training and mentoring Commis Chefs, and Chef de Parties to build their technical skills and product knowledge.
Support the Sous Chef in managing daily team briefings and contribute to a respectful and inclusive kitchen culture.
Operational Support & Financial Awareness
Help monitor stock levels, ensure proper rotation, and minimise food waste through efficient prep and storage.
Assist in daily/weekly stock takes, flag discrepancies, and contribute to maintaining accurate inventory records.
Be cost-aware in daily operations, supporting the Head and Sous Chefs in managing food margins and operational efficiency.
Ensure proper use and care of kitchen equipment, reporting maintenance issues as needed.
Guest Experience & Brand Standards
Support service with a focus on speed, consistency, and presentation, ensuring dishes meet both guest expectations and company standards.
Respond to any food-related guest feedback professionally and promptly, escalating concerns to the Sous or Head Chef where appropriate.
Be an ambassador of the HAM brand, reflecting its culinary values and dedication to excellence in every dish served.
Compliance & Safety
Follow and promote strict hygiene practices in line with HACCP, food safety regulations, and internal guidelines.
Support the safe operation of the kitchen by identifying and mitigating potential hazards and maintaining cleanliness throughout.
