Our first site in Borough launched in February 2025 to rave reviews — now, we're opening our flagship in Soho, and we’re hiring a Sous Chef to help lead the kitchen team on the ground.
As Sous Chef, you’ll work shoulder-to-shoulder with the Head Chef to run high-speed services, deliver exceptional food quality, and lead the brigade by example. You’ll be trusted to own the pass, support daily operations, and keep the team sharp and focused through every shift.
In Your First 12 Months, You’ll…
Lead the kitchen during service multiple days per week, running the pass across dine-in, delivery, and takeaway to ensure speed, quality, and consistency
Train new chefs to Heard standards during onboarding, ensuring all team members hit full execution and prep speed within 2 weeks of starting
Own daily prep and station checks, ensuring all mise en place is completed accurately, labelled, and signed off before each service window
Maintain kitchen readiness by completing daily food safety, cleaning, and temperature checks in line with Heard’s EHO and allergen standards
Monitor food quality across the line in real time, identifying issues early and coaching the team to correct technique on shift
Manage kitchen communication and team rhythm during service, ensuring breaks, resets, and transitions are smooth and coordinated
Support the Head Chef with stock counts and ordering, contributing to accurate weekly reporting and minimising waste through tight prep control
Cover the Head Chef when required, maintaining performance across service, team leadership, and kitchen standards in their absence
Deliver daily team briefs and debriefs when leading the shift, ensuring clear communication and accountability for food and service performance
Contribute to staff retention by creating a high-performing, respectful kitchen culture, with clear expectations and daily support
What You Bring
Experience as a strong Chef de Partie or Junior Sous in a high-volume, high-standard kitchen
Proven ability to run the pass, train junior chefs, and keep a team on track during busy services
A calm, clean, and consistent approach to prep, service, and communication
Knowledge of stock control, HACCP, allergen handling, and food safety best practice
A high standard for execution and pride in doing things right every time
The Heard Package
£19/hour – full-time, with consistent hours and paid breaks
Monthly meal for you + 4 guests – on us
Formal qualifications – including Mental Health First Aid and H&S Level 3
Career progression – training, leadership coaching, and pathways into senior roles
Service awards – from £100 after year one to a month off after ten
