About PYRO A celebration of cooking over fire, PYRO is a bold, 95-cover restaurant in the heart of Borough from ex-HIDE Head Chef Yiannis Mexis. Showcasing refined Greek flavours, seasonal produce, and a laid-back taverna-style energy, PYRO is all about food to linger over and service that feels like home. With a large outdoor terrace, open-fire kitchen, and garden bar, we’re building a flagship team to help shape one of London’s most exciting new openings.

The Role

We are looking for a knowledgeable and charismatic Sommelier to curate and lead our wine offering. At PYRO, our wine list should be as vibrant and soulful as our open-fire kitchen. You will be the storyteller on the floor, guiding guests through a list that highlights both Mediterranean gems and global classics, ensuring every bottle enhances the smoke and spice of Chef Yiannis’s menu.

Salary: Up to £17 per hour (including service charge) DOE Hours: Full-time 


Must-Have Requirements
  • Wine Expertise: Deep knowledge of international wines, with a particular affinity for Greek and Mediterranean varietals to match our culinary identity.

  • Commercial Acumen: Proven ability to drive wine sales and profitability while managing cellar stock and wastage efficiently.

  • Cellar Management: Experience in maintaining an organised cellar, assisting with costings, and ensuring the wine programme remains seasonal and fresh.

  • Versatile Background: Success in high-volume environments without losing the premium touch required for high-end Borough dining.

  • World-Class Service: A natural ability to deliver "taverna-style" warmth with "fine-dining" precision—making guests feel at home while providing expert guidance.

  • Leadership & Training: A passion for educating the wider floor team, elevating their wine knowledge to ensure a seamless guest experience.
