About PYRO A celebration of cooking over fire, PYRO is a bold, 95-cover restaurant in the heart of Borough from ex-HIDE Head Chef Yiannis Mexis. Showcasing refined Greek flavours, seasonal produce, and a laid-back taverna-style energy, PYRO is all about food to linger over and service that feels like home. With a large outdoor terrace, open-fire kitchen, and garden bar, we’re building a flagship team to help shape one of London’s most exciting new openings.

The Role

We are looking for creative and high-energy Bartenders to join our garden bar and indoor program. At PYRO, our drinks are an extension of the kitchen—focused on seasonal botanicals, fire-inspired techniques, and premium spirits. You’ll be delivering world-class mixology in a fast-paced environment where the atmosphere is as intense as the wood-fired grill.

Salary: Up to £16 per hour (including service charge) DOE Hours: Full-time 

Must-Have Requirements
  • Mixology Mastery: Advanced skills in cocktail creation and a genuine passion for innovation. You should be comfortable with classic builds and bespoke, seasonal signatures.

  • High-Volume Excellence: Proven experience working in high-volume bars without compromising on premium service standards or garnish precision.

  • Commercial Awareness: A focus on consistency and waste management to ensure the bar remains profitable and efficient.

  • Spirit Knowledge: A deep understanding of spirits, particularly Mediterranean-inspired liqueurs and botanicals, to align with our Greek heritage.

  • Team Performance: A proactive "can-do" attitude—helping to train juniors and ensuring the bar station is always prepped for a high-intensity shift.

  • Hospitality Soul: The ability to engage guests at the garden bar with the warmth of a traditional taverna and the polish of a London flagship.
