A celebration of cooking over fire, Pyro is a bold, 95-cover restaurant in the heart of Borough from ex-HIDE Head Chef Yiannis Mexis. Showcasing refined Greek flavours, seasonal produce and a laid-back taverna-style energy, Pyro is all about food to linger over and service that feels like home. With a large outdoor terrace, open fire kitchen, and garden bar, we are building a flagship team to lead one of London’s most exciting new restaurants.

Role Overview

We are seeking a sharp, energetic Assistant Restaurant Manager to join our permanent leadership team. As a key presence on the floor, you will support the General Manager in driving service excellence, mentoring the team, and ensuring the restaurant’s commercial and operational success. You will be a conductor of the dining room, managing the rhythm of high-volume services while maintaining the warmth and polish that defines the Pyro experience.

Salary: Up to £45,000 per annum (including service charge) DOE Hours: Full-time

Key Responsibilities

  • Service Leadership: Own the floor during busy services, managing a 95-cover site and large terrace with confidence, authority, and warmth.

  • Team Development: Recruit, train, and mentor the front-of-house team, fostering a culture of excellence and ensuring clear pathways for internal growth.

  • Operational Excellence: Oversee daily operations including opening/closing procedures, site security, and meticulous attention to site standards and cleanliness.

  • Commercial Support: Assist the GM in managing labour costs, rotas, and stock control to hit site-level P&L targets.

  • Guest Relations: Act as a senior brand ambassador, handling guest feedback with professionalism and ensuring a high-energy, welcoming atmosphere.

  • Collaboration: Maintain seamless communication with the open-fire kitchen to ensure the "pass" and the floor move in perfect synchronization.

  • Compliance: Uphold all Health and Safety, Food Safety, and licensing regulations, ensuring the site is consistently audit-ready.

What You’ll Bring

  • Experience: Proven track record as an Assistant Manager or strong Floor Manager in a premium, high-volume restaurant.

  • Leadership: A confident, natural leader who can motivate a diverse team and remain calm under the pressure of a busy London service.

  • Operational Knowledge: Solid understanding of floor management, reservation systems (e.g., SevenRooms), and commercial reporting.

  • Passion: A genuine love for Mediterranean hospitality and a team-first mindset.

  • Detail-Oriented: A sharp eye for the "small things" that elevate a guest's experience from good to exceptional.
