The Opportunity

We are seeking a passionate and skilled Part-Time Sr. Pizza Chef to join our kitchen team at Spring Street Pizza in London Bridge. Launched by Michelin-starred chef Tom Kemble, Spring Street is dedicated to perfecting the 18" New York style pizza.

The ideal candidate will have a strong background in pizza making, specific knowledge of biga dough production, and the ability to work well at volume while maintaining absolute consistency. An open mind and flexibility are essential as we utilize innovative techniques to create our signature NY style pies.

Role Overview

As a Senior Pizzaiolo, you will be responsible for preparing high-quality pizzas in a fast-paced environment while ensuring the highest standards of cleanliness and organisation. You will support the Head Chef in leading the kitchen team during your shifts and ensuring operational excellence.

Duties

  • Culinary Execution: Prepare and cook a variety of pizzas according to established recipes and customer preferences, focusing on the 18" NY style.

  • Food Safety: Ensure all food preparation is conducted in strict compliance with food safety regulations and standards.

  • Operational Ownership: Manage daily food safety recording through Trail and Alert65.

  • Inventory Management: Monitor inventory levels of pizza ingredients, including taking ownership of stock takes and ordering during your shifts.

  • Kitchen Efficiency: Maintain a clean and organised workspace and assist in the preparation of other menu items as needed.

  • Team Leadership: Help train new kitchen staff on pizza techniques, food safety, and health and safety protocols.

  • Collaboration: Work closely with the wider kitchen team to ensure timely service during peak high-volume periods.

Experience and Requirements

  • Technical Background: Proven experience as a Pizzaiolo, ideally with specific experience in New York style pizza.

  • Dough Knowledge: Strong understanding of biga dough production and fermentation processes.

  • Compliance: Excellent knowledge of food safety practices and UK kitchen regulations is essential.

  • Team Spirit: Ability to work effectively in a team-oriented environment while taking individual responsibility for your station.

  • Organisation: Strong multitasking skills with a calm approach to a busy kitchen setting.

  • Passion: A genuine love for the craft of pizza making and a commitment to creating great customer experiences.
