From the royal kitchens of 18th century Lucknow to a Grade II–listed Victorian building in Borough, Aktar Islam introduces Oudh 1722 - his expression of Awadhi tradition.

Shaped by the intermingling of Persian, Mughal, and Central Asian influences, Awadhi cuisine is one of India’s most distinguished culinary legacies. Famed for its melt-in-the-mouth kebabs, saffron-scented biryanis, and subtle slow-cooked curries, it is defined by patience, refinement, and centuries of royal ambition. 


At Oudh 1722, the wine list is not a formality — it is an argument.
A carefully curated conversation between the ancient spice routes of Northern India and the vineyards of Burgundy, the Rhône, the Loire, and beyond. We are looking for a sommelier who understands that pairing is about emotion as much as it is about chemistry. Someone with the technical foundations to engage the most demanding guest, and the intuition to make every table feel as though the wine was chosen for them personally.

The Role

This is a floor-focused position — your stage is the dining room.
You will be the guest's guide, the bridge between kitchen and cellar, and a key part of what makes an evening at Oudh 1722 memorable. Alongside day-to-day service, you will have genuine input into list development and the opportunity to grow within a restaurant that takes its wine programme seriously.

  • Lead wine service across lunch and dinner, delivering confident, unhurried recommendations

  • Build genuine relationships with guests — know when to educate, when to simply delight

  • Support the development and curation of the wine list

  • Manage cellaring, stock rotation and par levels with precision

  • Contribute to staff training, raising the team's wine knowledge and confidence

Represent Oudh 1722 with elegance in every interaction

Who We Are Looking For

  • WSET Level 2 or above, or CMS Certified Sommelier 

  • Demonstrable experience in a high-end restaurant environment — you know the pace and the standard

  • A natural communicator with genuine warmth and presence on the floor

  • Curious about food-and-wine interaction, with an interest in Indian cuisine and its pairing possibilities

  • Detail-oriented, self-motivated and committed to continued learning

The maturity to thrive in a team that holds itself to high standards

What We Offer

  • £18 per hour inclusive of tronc

  • Full-time, minimum 40 hours per week

  • Monday and Tuesday off — a proper weekend-adjacent schedule

  • Sunday lunch service only — your Sunday evenings are yours

  • Staff meals provided on every shift

  • 5.6 weeks paid holiday, inclusive of public holidays
