Shaped by the intermingling of Persian, Mughal, and Central Asian influences, Awadhi cuisine is one of India’s most distinguished culinary legacies. Famed for its melt-in-the-mouth kebabs, saffron-scented biryanis, and subtle slow-cooked curries, it is defined by patience, refinement, and centuries of royal ambition.
This is a floor-focused position — your stage is the dining room.
You will be the guest's guide, the bridge between kitchen and cellar, and a key part of what makes an evening at Oudh 1722 memorable. Alongside day-to-day service, you will have genuine input into list development and the opportunity to grow within a restaurant that takes its wine programme seriously.
Lead wine service across lunch and dinner, delivering confident, unhurried recommendations
Build genuine relationships with guests — know when to educate, when to simply delight
Support the development and curation of the wine list
Manage cellaring, stock rotation and par levels with precision
Contribute to staff training, raising the team's wine knowledge and confidence
Represent Oudh 1722 with elegance in every interaction
Who We Are Looking For
WSET Level 2 or above, or CMS Certified Sommelier
Demonstrable experience in a high-end restaurant environment — you know the pace and the standard
A natural communicator with genuine warmth and presence on the floor
Curious about food-and-wine interaction, with an interest in Indian cuisine and its pairing possibilities
Detail-oriented, self-motivated and committed to continued learning
The maturity to thrive in a team that holds itself to high standards
What We Offer
£18 per hour inclusive of tronc
Full-time, minimum 40 hours per week
Monday and Tuesday off — a proper weekend-adjacent schedule
Sunday lunch service only — your Sunday evenings are yours
Staff meals provided on every shift
5.6 weeks paid holiday, inclusive of public holidays
