What you’ll do

As an Assistant Restaurant Manager, you will partner with the Restaurant General Manager and broader leadership team to uphold CUT’s reputation for world-class service and culinary excellence. You’ll cultivate a team that reflects the values of inclusion, creativity, and passion emblematic of the Dorchester Collection.

Operational Excellence & Guest Experience

  • Oversee daily dining operations - front of house flow, reservation management, coordination with the kitchen - for seamless, high-end guest experiences.
  • Handle guest feedback and special requests with grace and professionalism, ensuring satisfaction, personalized attention, and swift resolution.
  • Actively engage in service, serving tables when needed to maintain elevated standards and a hands-on approach.

Team Leadership & Development

  • Inspire and train a highly motivated, guest-centric team in line with CUT and Dorchester Collection values: Passion, Personality, Respect, Working Together, Creativity.
  • Assist in recruiting new team members who embody the brand’s excellence and spirit of innovation.
  • Identify development opportunities for staff, promoting growth through coaching, daily engagement, and ongoing feedback.

Financial & Administrative Oversight

  • Support the Restaurant General Manager in monitoring financial metrics - cost control, revenue, budgeting, inventory management - to achieve performance targets.
  • Implement and uphold SOPs to ensure operational consistency, accuracy, and efficiency throughout service.
  • Contribute to scheduling, rotas, and administrative processes to support workforce planning and compliance.

Culture & Brand Stewardship

  • Champion and nurture an inclusive, creative, and passionate culture aligned with both CUT’s and Dorchester Collection’s ethos.
  • Serve as a culture ambassador, modelling exceptional service and professionalism in all interactions.

The operational hours of work are shift-based and may be subjected to change. These currently set as: Full-time, shift-based role including weekends, evenings, and public holidays as required. On-call support may be required for emergencies.


What you’ll bring

Essential Skills and Experience

  • Proven background in high-end hospitality, particularly within luxury dining, hotel restaurants, or premium establishments.
  • Deep understanding of food & beverage operations, service flow, and cost management.
  • Exceptional leadership and communication skills, capable of inspiring and mentoring teams.
  • Detail-oriented, proactive, and adept at problem-solving in a dynamic, fast-paced environment.
  • Fluency in English required; additional language skills are a plus.

Preferred Skills

  • Wine and beverage knowledge: Understanding of wines, cocktails, and food pairings.
  • Additional languages: Ability to speak another language besides English.
  • Training skills: Experience teaching or mentoring new team members.
  • Financial awareness: Understanding of budgets, sales, or cost control in restaurants.
  • Technology use: Comfortable using reservation systems, POS (till systems), or scheduling tools.
