The Newt in Somerset


The Newt in Somerset is a country estate with ancient woodland, historic gardens and far-reaching views; a new and unique destination with luxury hotel, spa, restaurants and an abundance of homegrown produce. Visitors can take a tour of the gardens, deer park and cyder press, dine in the Garden Café or browse our farm shops. Attracting some 200,000 visitors per year from all over the world, our vibrant and thriving garden attraction is animated throughout the seasons by special events, workshops and educational programmes.



Department Description


The Cyder department has 2 key roles:

1)            Produce world class, award winning cyders

2)            To deliver an apple pressing “show” integrated within the VA, weekly from spring to Autumn.

The department is permanently on show to the VA guests, so interpersonal skills and high standards of dress/bearing & tidiness with the working environment are essential.  The department also delivers cyder tours, tastings, orchard tours, bespoke events for hotel guests and corporate events.  The cyder cellar is high tech and one of the best in the UK – it is quickly gaining a reputation for the production of the finest cyder in the UK to match.  As well as cyder, the team produces apple juices.

 


Position Summary


Somerset is rich in heritage for traditional orchards and craft cyder making, and The Newt in Somerset fully embraces this heritage and culture and has invested in the future of this rural landscape by planting substantial standard orchards, including over 70 apple varieties.  Our bespoke production and fermentation facility has been designed for small batch (1400L/2500L) production to allow the cyder maker to create both “base” cyder and also experiment with unusual single variety ciders that may be used in the blending process.  Utilising a bespoke conditioned atmosphere storage facility with a capacity of over 100 tons, the Newt Cyder Experience will be completely unique in that the visitor will witness traditional cyder making throughout the year but biased around the busy public/school holidays.

 

 

Key Responsibilities:


  • Assist in the development of the production line processes embracing continual improvement
  • Conduct expert handing of the fermentation, blending and finishing process, maintaining high production standards and quality control
  • Utilise and apply analytical skills in the laboratory to achieve high quality products
  • Comply with current legislation in Health & Safety and Environmental Health policy
  • Maintenance of laboratory and production records on a daily/weekly/monthly basis to comply with HMRC regulations and best practice.
  •  Assist with the logistical planning and execution of the raw material requirement to match the planned production plan on a daily/weekly basis

 


Skills and Experience


  • Proven technical expertise and hands on experience in medium/large scale commercial cyder production including fermentation processes, product adjustment and expert skills in blending
  • Practical experience and expert knowledge of laboratorial practices and methodology
  • In depth knowledge and practical experience in the application of bio-chemistry utilised in the cyder production process
  • Pro-active team-player, able to integrate into a small cyder team and also the wider Newt staff community
  • Confident and personality to interact with hotel guests and the general public on a daily basis during apple pressing demonstrations, Cyder House tours, tastings and other general Newt events and a commitment and eagerness to provide the highest level of visitor experience 
  • IT skills for maintaining efficient production and laboratory records are an essential requisite.
  • Ability to travel within the UK and overseas including full and UK driving license.
