We’re thrilled to announce that D3 is growing! Our second venue is opening at the iconic Olympia London, and we’re on the lookout for an experienced and enthusiastic Head Sommelier to join our team from 1st of September 2025.

About the Role

We are seeking a passionate, knowledgeable, and experienced Head Sommelier to lead our wine program. The ideal candidate will be responsible for curating and managing the wine list, training staff, and delivering an exceptional guest wine experience. This role requires a strong understanding of wine, excellent service standards, and leadership abilities.

What We’re Looking For:

  • 2+ years of experience in a Head Sommelier role
  • Strong leadership and people management skills
  • Certification from WSET, Court of Master Sommeliers, or equivalent preferred
  • Strong knowledge of wine regions, vintages, producers, and trends
  • Excellent communication and problem-solving abilities
  • Deep understanding of hospitality best practices and customer service principles
  • Excellent organizational and multitasking abilities
  • Experience working in fast-paced, high-volume environments with ability to remain calm and professional in high-pressure environments

Key Responsibilities

  • Curate and maintain an outstanding and diverse wine list in line with the restaurant’s concept and clientele.
  • Oversee inventory, purchasing, and storage of all wine and related beverage stock.
  • Offer expert wine recommendations to guests, enhancing their dining experience.
  • Maintain a visible presence on the floor during service, engaging with guests and providing wine service.
  • Train and mentor FOH staff in wine knowledge and service techniques.
  • Conduct regular tastings and educational sessions for the team. Ensure all licensing laws and health & safety guidelines are adhered to.
