Description
We are a high-quality, scratch-made bagel bakery focused on craft, consistency, and hospitality. We produce a wide range of traditional and specialty bagels daily, using multiple dough recipes and fermentation methods. Our goal is to create a product that stands out—while building a strong, reliable team behind it.
Position
We’re looking for a Dough Maker / Production Baker to lead and execute our daily dough production. This role is responsible for mixing, scaling, and managing multiple bagel dough recipes while maintaining strict consistency and quality standards.
Responsibilities
- Mix and prepare multiple bagel dough recipes daily (classic, whole grain, specialty flavors)
- Accurately weigh and scale ingredients (flour, water, yeast, salt, inclusions)
- Manage dough hydration, temperature, and consistency
- Monitor fermentation and proofing times
- Adjust recipes based on weather, humidity, and production needs
- Coordinate with shaping and baking team to meet production goals
- Maintain clean, organized, and efficient workstations
- Follow all food safety and sanitation standards
- Assist with prep for specialty bagels and rotating flavors
Schedule
- Approximate shifts Monday-Saturday (typically 5 shifts starting between 7:00AM-2:00PM)
- Consistent schedule preferred
Qualifications
- Experience in baking, dough production, or commercial kitchens preferred
- Strong attention to detail and ability to follow recipes precisely
- Ability to manage multiple tasks and timelines simultaneously
- Comfortable working in a fast-paced production environment
- Ability to lift flour bags, dough bins
- Reliable, punctual, and team-oriented
- Willingness to learn and improve
Deke's bagels is currently looking to expand within Connecticut, threfore there is room for growth into different rolls along with additional hours and compensation.
