Born in Yokohama, Chef Endo Kazutoshi is a third-generation sushi master dedicated to the centuries-old Edomae style of sushi. Inspired by his father and grandfather, Chef Endo brings together heritage, discipline, and innovation to create a dining experience of exceptional precision and elegance.

Endo’s offers an intimate omakase experience, where guests sit at the counter and engage directly with the chefs. Every element — from ingredient preparation to service execution — is deliberate, refined, and deeply respectful of tradition.


The Role

We are looking for a committed and detail-driven Commis Chef to join our kitchen team at Endo’s.

This is a rare opportunity to work within a Michelin-level, chef’s table environment, where the kitchen is fully open and excellence is visible at every moment. You will support senior chefs in the preparation and execution of our omakase menu, contributing to a calm, focused, and highly professional service.

This role is ideal for a Commis Chef who is passionate about fine dining, thrives in open kitchens, and is eager to develop their craft in one of London’s most respected Japanese restaurants.


Key Responsibilities

  • Assist with daily mise en place and service preparation to the highest standards
  • Support senior chefs during service in an open-kitchen, guest-facing environment
  • Prepare ingredients with precision, care, and respect for product
  • Maintain exceptional cleanliness, organisation, and food safety standards
  • Follow instructions with discipline while demonstrating a willingness to learn
  • Contribute positively to a respectful, inclusive, and focused kitchen culture

What We’re Looking For

  • Previous experience in a Michelin-starred or equivalent fine dining kitchen
  • Experience in a chef’s table or open-kitchen environment is highly desirable
  • Confidence working in front of guests, with strong composure and professionalism
  • A strong eye for detail and pride in consistency and presentation
  • Curiosity, humility, and a genuine desire to learn and progress
  • A collaborative approach and respect for diversity — we actively encourage applications from underrepresented groups within professional kitchens
