Description

Mount Royal Hotel Edinburgh by the Unlimited Collection is looking for a passionate and dynamic individual with a flair for leadership and a commitment to exceptional service to join our team as a Breakfast Manager


The Breakfast Manager will be responsible to:
  • Take responsibility for the daily breakfast operations of both Front of House and Kitchen teams, ensuring smooth and efficient service
  • Assist the Food and Beverage Manager in developing and implementing the business plan, identifying commercial opportunities to maximise revenue and deliver against budget targets
  • Lead by example in delivering a memorable breakfast experience that exceeds guest expectations
  • Ensure compliance with all health and safety regulations while maintaining a clean, safe, and welcoming environment
  • Support in the recruitment, training, and coaching of new team members across FOH and BOH, fostering a positive, service-led culture
  • Oversee the planning and delivery of rotas to meet business needs while maintaining excellent service standards
  • Monitor food quality and presentation, ensuring consistency with the hotel’s high standards
  • Maintain effective stock control, oversee breakfast pricing in the catering software system, and ensure all financial procedures are followed accurately
  • Assist the Food and Beverage Manager in the analysis and use of financial data to drive optimum performance
  • Liaise with suppliers and clients, sourcing locally where possible and promoting sustainability and quality
A successful Breakfast Manager will have:
  • Previous hospitality experience at managerial level
  • Previous 4-star hotel restaurant experience
  • Previous experience in a Rosette environment is preferred but not essential
  • Customer-focused approach with excellent customer service skills
  • Previous experience of handling customer complaints and guest requests professionally
  • Excellent team-leading skills with the ability to motivate and inspire
  • Ability to communicate clearly and concisely with guests and colleagues
  • Excellent organisational skills with the ability to multi-task and troubleshoot under pressure
  • A well-organised, outgoing, and service-minded personality
  • Confident and courteous manner
  • The ability to coach, lead and motivate a team to deliver first-class service
  • Strong organisation and planning skills, with the ability to manage multiple priorities
  • A good command of English is essential; a second language is advantageous
  • A positive, proactive approach to delivering service excellence and driving commercial success
