This is your chance to elevate your culinary skills, gain invaluable experience, through our luxurious 5-star hotels.

About the Programme

Our comprehensive programme is designed to immerse you in the world of high-end cuisine, guided by our talented Head Chefs and senior team members. You'll refine your knife skills, menu writing, understand food costings, and develop your own signature dishes. This journey includes multiple kitchens, hands-on practice, masterclasses, and supplier visits, ensuring a well-rounded culinary education. 

We are now accepting applications for the Development Programme to start on the 3rd March.

What You Will Learn

Throughout this course, you will learn:

• Create Innovative Dishes: Develop menus reflecting seasonality and the latest culinary trends.
• Ensure Food Safety: Maintain rigorous food safety standards and manage kitchen equipment.
• Produce Quality Cuisine: Deliver exceptional dishes consistently, maintaining the high standards of Firmdale Hotels.
• Lead and Inspire: Brief, coach, and motivate your team to achieve excellence in the kitchen.
• Cost Management: Learn to cost dishes, monitor ingredient use, and control kitchen wastage.
• Allergen Awareness: Understand and manage allergens in your dishes.
• Specialisation Option: As part of your professional development, you have the opportunity to select your focus for the final 6 months of the program. You can choose to work in either the Pastry Kitchen, Main Kitchen, or Events Kitchen.
