OVERVIEW OF ROLE 

Head Servers are experts of the food & beverage world, exhibiting warm hospitality and moving in service with purpose and efficiency. Their working knowledge of our food menus, wines, spirits, cocktails and hot beverage programs is impressive. They also have a substantial foundational knowledge if the culinary world alongside classic cocktails and major grape varieties and wine producing regions. Head Servers are responsible for maintaining the same level of food knowledge amongst themselves throughout all the outlets, knowing all ingredients, preparations, allergens and possible modifications for all dishes produced in the kitchen. They are also looked to as leaders amongst the staff and should aim to be a source of inspiration and aspiration.

The Head Server is expected to:

  • Be professional at all the times.
  • Be a positive ambassador of The NoMad throughout your professional career with us.
  • Always adhere to company policies and procedures, including but not exclusive of; H&S policies, HR policies; employee handbook. 
  • To role model The NoMad values, and bringing them to life through each and every interaction.
MAIN DUTIES & RESPONSIBILITIES

The main responsibilities of the Head Server are summarised below, the list is not exhaustive: 

  • Head Servers are responsible for greeting and communicating warmly with all guests in the space. They deliver beverage and food menus, process orders into Micros and maintain a high standard of service throughout a guest’s visit. They know all well spirits and spirit brands featured in our bars. They can speak to the structure of our food and cocktail menus, ingredients, methods and presentations of all dishes and drinks served.
  • They know all our wines by the glass on offer and can discuss major wine regions, climates, terroir and styles of wine, making confident recommendations. They are well-versed in wine service protocols and glass pouring levels. They have Head Servers set up the floor for service, ensure waiter stations are well stocked and all tools needed to execute service are available. They are responsible for maintaining glassware and assisting in any reasonable tasks as directed by the business needs.
  • Head Servers must be able to explain and discuss all food dishes and beverage options available as well as have a full understanding of traffic patterns, position numbers, section plans and the team on site. Working alongside Barbacks, Bartenders, Maitre D's, Hosts, Assistant Servers and Bar Managers, Head Servers deliver an informed and expert service to all guests, championing our food & beverage programmes.
  • Take responsibility for CGS stocktake and report numbers weekly to a Dining Room Manager for ordering purposes 
  • Take responsibility for training new servers / cocktail servers
  • Create food and cocktail information sheets for the staff, including 100,200 and 300 level information, photographs, allergies, and fun facts.
  • Assisting management in presenting in Line ups, creating Happy hours and quizzes to help develop the team. 
  • Assist management with overseeing service and any additional tasks they may have to undertake.
