THE ROLE - HEAD SOMMELIER

The head sommelier are responsible for everything related to wine service. They are the leading example for our sommelier team, in terms of service standards, knowledge and warm hospitality.

They lead service with unwavering attention to detail, precision and warmth. The head sommelier will be the point of contact between the Wine Director and the sommelier team, leading by example on the floor, in the cellar and amongst the team. They will make sure sommeliers’ knowledge level meets the criteria required and focus on the development of their skills. They will also lead on training the team at large on everything related to wine and wine service.

MAIN DUTIES & RESPONSIBILITIES

The main responsibilities of the Head Sommelier are summarised as below, however the list is not exhaustive: 

  • Approaching the table with our wine list and assist the guests in any wine choices. 
  • Mise-ing glassware and fetch and serve the bottles / drinks in an efficient and timely manner. 
  • Setting up the restaurant for service. 
  • Ensure all outlets in the hotel are stocked with the correct amount of wine by the glass. 
  • Educating our waiters team to our wine by the glass selection and wine service as a whole. 
  • Taking care of deliveries and the upkeep of the wine cellars.
  • Upkeep of the wine list (vintage changes, out of stock, new wines listing).
  • Looking after training, development and mentoring of new and existing members of the team.
  • Overviewing the wine operations for our Events department.
  • Leading service in a professional, yet personable manner.
