Manchester Marriott Victoria & Albert Hotel, a striking Grade II listed building in the vibrant Spinningfields district, offers 148 stylish guest rooms and suites with modern amenities. The hotel is home to the V&A Bar & Restaurant, our relaxed all-day dining destination serving a blend of British and international cuisine with a focus on locally sourced produce and sustainability.
Our hotel also boasts a diverse conference and events offering, with flexible meeting rooms, an outdoor terrace, executive boardrooms, and elegant banqueting facilities for up to 200 guests. From corporate meetings and conferences to weddings, celebrations, and private events, our Food & Beverage team plays a vital role in delivering exceptional guest experiences.

The Role
We are looking for an experienced, passionate, and commercially driven Food & Beverage Manager to lead our restaurant, bar, conference, and events operations.
Reporting to the General Manager, you will be responsible for delivering exceptional service standards while driving revenue, profitability, and guest satisfaction across all Food & Beverage outlets. You will inspire and develop your team, ensure operational excellence, and create memorable experiences for every guest, whether they're enjoying dinner in the restaurant, attending a business conference, or celebrating a special occasion.
Key Responsibilities
  • Lead the day-to-day operation of the restaurant, bar, breakfast, room service, and conference & events food and beverage service.
  • Drive exceptional guest satisfaction through outstanding hospitality and service delivery.
  • Recruit, coach, develop, and motivate a high-performing Food & Beverage team.
  • Manage labour costs, payroll, stock control, and departmental budgets to maximise profitability.
  • Work closely with the Sales, Events, and Kitchen teams to ensure flawless delivery of meetings, conferences, weddings, and social events.
  • Ensure compliance with Marriott brand standards, food safety, health & safety, and licensing regulations.
  • Identify opportunities to increase revenue through promotions, upselling, and innovative food and beverage offerings.
  • Monitor financial performance and implement action plans to achieve departmental targets.
  • Foster a culture of continuous improvement, teamwork, and operational excellence.
About You
We're looking for someone who brings:
  • Previous experience as a Food & Beverage Manager or Senior Food & Beverage leader within a hotel environment.
  • Strong experience managing conference, banqueting, and events operations alongside restaurant and bar service.
  • A proven track record of leading, coaching, and developing successful teams.
  • Excellent commercial awareness with experience managing budgets, payroll, and cost controls.
  • Outstanding organisational and communication skills.
  • The ability to thrive in a fast-paced environment while maintaining exceptional attention to detail.
  • A genuine passion for hospitality and creating memorable guest experiences.
  • Flexibility to work evenings, weekends, and holidays as required.
