What's the opportunity

We are seeking a passionate and creative candidate who is experienced in commissary, catering or other high volume kitchen management, to provide direction, organization, and leadership to our commissary team and to help us grow our catering department. 

With your leadership and expertise, we will continue to build and expand this department of the company. Your input will be instrumental as we finish a large construction buildout project overhauling our warehouse space, including a new and improved commissary. Furthermore, you will also be a key part of the R&D team, contributing to the culinary menus, doing recipe development, and working with various vendors to source the best ingredients.

The Commissary Manager is the direct report for all members of the commissary, including bakers and prep cooks. They are responsible for leading their team, both through effective communication and by example. They set a high standard for the commissary kitchen and help their team reach that standard.


What will I do?

Commissary Management
  • Demonstrate a complete understanding of G&B/Go Get Em Tiger values and standards, including the 10 Principles of Customer Service, as outlined in the company training documents
  • Foster a team-first atmosphere for all employees by adhering to the above principles
  • Manager the commissary team through performance management, scheduling, hiring, progressive discipline, and regular feedback
  • Manage up. Bring solutions to your manager for the problems facing the commissary
  • Serve as a well-rounded source of knowledge and assistance for both the pastry and savory teams.
  • Determine daily, weekly and long term needs of the commissary while overseeing the day to day operations
  • Oversee facility and equipment maintenance
  • Ensure strict compliance with all food health and safety codes in LA county
  • Implementation and maintenance of a HACCP plan
  • Produce regular inventory and operational reports
  • Help control commissary financial targets, create budgets and forecast labor, food cost, waste, etc.
  • Manage vendors, inventories and ensure the production area is fully stocked
  • Meet regularly with Director of Culinary Operations to review processes and systems, address staff needs, develop the department and make changes to systems as necessary
  • Work closely with the quality control team to maintain company standards, auditing product quality and freshness, troubleshooting issues as they arise.
  • Collaborate with the R&D department on menu design and recipe development for commissary & retail
  • Collaborate with Director of Culinary Operations for sourcing
  • Oversee training at commissary
  • Shop invoicing and fulfillment

Catering / events / special orders
  • Help build and expand the catering department
  • Create ideas for various catering promotions
  • Oversee production for special events, photo shoots, and promotions as needed
  • Organize with fulfillment staff for all special orders to be delivered to stores
  • Collaborate with head baker for pastry specials
  • Handle all inquiries
  • Responsible for invoicing and fulfillment

Skills and qualifications
  • 3-5 years of managerial/ supervisor experience in commissary, hotel, catering or other high volume kitchens.
  • Food Safety Manager certification
  • Understanding and ability to execute all necessary kitchen functions at a high level
  • Experience with Restaurant365 software and google workspace applications (sheets, etc.)

Physical Requirements:
  • Ability to work on your feet for long durations of the day occasionally
  • Ability to lift or move up to 50lbs
  • Frequent bending at the waist
  • Exposure to a warehouse/production environment with moderate noise levels
  • Frequent work at a computer
