About The Role

The Development Chef plays a key role in driving culinary excellence and innovation across the Gaucho group. Working closely with the Culinary Director, this role is responsible for developing, documenting, and delivering new recipes, ensuring quality and consistency through training, and supporting the execution of the brand’s evolving food vision.

Key Responsibilities

  • Recipe Development & Innovation: Collaborate with the Culinary Director on new menu concepts, develop and test dishes seasonally, manage tastings, and liaise with the director of product development and supply chain.
  • Specification Writing & Documentation: Create detailed recipe specifications, method sheets, plating guides, and training documentation; maintain accurate costings and version control.
  • Training & Implementation: Lead hands-on training sessions, deliver menu rollout workshops, support new openings, and identify training needs across sites.
  • Operational & Quality Support: Conduct site visits, monitor spec adherence, and support teams during openings and re-launches.
  • Collaboration & Culture: Act as a brand ambassador, collaborate cross-departmentally, and support PR or media opportunities as needed.

Key requirements of the Gaucho Development Chef

  • Minimum x1 year of of developing and standardising recipes for multi-site hospitality operations
  • Have proven examples of spec writing, costings and kitchen systems for multi-site operations
  • Desireable – experience in creating Latin American menus
  • Strong creative and technical cooking ability
  • Excellent communication and training skills to engage, inspire and lead chefs of all levels.
  • Strong organisational skills and attention to detail.
  • Positive, solutions-driven attitude under pressure.
