As Wine Manager at Hawksmoor, you’ll be the on-site expert for all things wine, leading the wine programme within the restaurant and inspiring the team to deliver confident, knowledgeable and memorable wine service. This is a senior, hands-on leadership role where you’ll combine floor presence, education, procurement and commercial awareness to ensure our wine offering is exceptional in both quality and performance.

You’ll work with an ambitious and award-winning wine list, collaborating closely with the General Manager, Bar Manager and wider leadership team to maintain high standards and drive revenue through wine excellence.

What You’ll Do
  • Lead wine education and inspire both FOH and BOH teams to confidently sell and serve wine
  • Curate and develop the wine list in line with Hawksmoor standards and guest expectations
  • Maintain a visible and high-level presence on the floor during service
  • Manage supplier relationships and sourcing opportunities
  • Oversee wine margins, stock control and financial performance
  • Drive wine sales through training, tastings and guest engagement
  • Work closely with the senior team to ensure operational and commercial success
Who You Are
  • Experienced as a Wine Manager, Head Sommelier or senior wine-focused hospitality leader
  • Passionate about wine education and team development
  • Commercially aware and confident managing financial performance
  • A strong floor leader who enjoys guest interaction
  • Organised, detail-focused and calm under pressure
