As a Junior Sous Chef – Pastry at Hawksmoor, you’ll play a key role in leading the pastry section, supporting the Sous Chef and wider kitchen leadership team to deliver consistently high-quality desserts with precision and care. This is a hands-on role where leadership, organisation, attention to detail and pride in your craft are essential. You’ll help drive standards across the section while supporting and developing the chefs around you.

What You’ll Do
  • Lead and oversee the pastry section during prep and service
  • Prepare, cook and present desserts to Hawksmoor standards
  • Support the Sous Chef and Head Chef with the smooth running of the kitchen
  • Organise and manage pastry mise en place, ensuring the section is fully prepared for service
  • Maintain consistently high standards of food quality, presentation and food safety
  • Support, coach and develop Commis Chefs and Chef de Parties on the pastry section
  • Help coordinate the pastry team during busy services, keeping standards high and the kitchen organised
  • Monitor stock, wastage and ordering within the pastry section
  • Work closely with senior chefs to maintain consistency and continually improve the pastry offering
  • Lead by example, creating a positive and supportive working environment for the whole kitchen team
Who You Are
  • Experienced as a Chef de Partie or Junior Sous Chef within pastry
  • Confident running a pastry section and leading a team during busy service
  • Passionate about baking, desserts and developing your technical skills
  • Organised, calm and able to make good decisions under pressure
  • Detail-focused, with a strong commitment to quality and consistency
  • A natural team player who enjoys supporting and developing others
  • Comfortable taking responsibility and leading by example
  • Keen to continue developing your career and progress within a professional kitchen
