Our Sushi Line Cooks are responsible for providing the Gordon Ramsay standard of remarkable experiences and exceptional hospitality to our guests. The Sushi Line Cook executes all sushi menu recipes with precision and consistency, ensuring proper presentation and immediate service.
This role requires strong skills in sushi preparation including rice, rolls, sashimi, and nigiri while following portion control, temperature standards, and company recipes. Sushi Line Cooks are also responsible for all aspects of their station, including set up, prep, stocking, cleanliness, organization, sanitation, break down, and storage.
Key Responsibilities
Prepare and execute sushi menu items according to company recipes and guest requests.
Maintain proper handling and storage of raw fish and seafood in compliance with food safety guidelines.
Deliver consistent taste, texture, and presentation of all sushi offerings.
Complete daily station setup, mise en place, and breakdown.
Maintain cleanliness, organization, and sanitation of the sushi station at all times.
Collaborate with fellow kitchen team members to ensure smooth service and timing.
Follow portion control and minimize waste while meeting food cost goals.
Support with inventory, storage, and rotation of seafood and dry goods.
Adhere to all company policies, health regulations, and food safety standards.
Qualifications
Prior sushi-making experience in a high-volume, quality-driven restaurant required.
Strong knife skills and deep knowledge of sushi preparation techniques.
Ability to work efficiently in a fast-paced, high-pressure environment.
Keen eye for detail and commitment to quality and consistency.
Team-oriented with strong communication skills.
Flexibility to work nights, weekends, and holidays.
