At the time the documentary was filmed, Chef Nakazawa was an apprentice under famed Sushi Master Jiro Ono at Sukiyabashi Jiro, a world-renowned sushi bar in Tokyo. Part of the narrative focused on his struggles and eventual triumph in making tamago. At the time, Chef Nakazawa was living and working in Seattle, but he received Mr. Borgognone's message, the two met in New York City over many months before deciding they should open a restaurant together. In August of 2013, Sushi Nakazawa opened in New York City’s West Village.

The opening of Sushi Nakazawa was met with great excitement and much acclaim. In December of the same year, the restaurant received a rare and coveted four-star review from The New York Times. This achievement helped to cement Sushi Nakazawa as an institution in New York’s dining scene, making it the first Japanese four-star restaurant. Sushi Nakazawa's Washington, DC location marks the duo's first venture outside of New York City. Located in the Old Post Office, Sushi Nakazawa features a similar sushi and beverage program to that of its sister location in New York. While the spaces look different from one another, Sushi Nakazawa in Washington, DC also showcases a Western sensibility in both its service and design.

Sushi Nakazawa takes pride in its accomplishments and is equally excited for the future. You are a part of that future. We hope that you find the joy and fulfillment in hospitality that we all share.

The future is now.
