Hill Country is a complex, high-volume operation that depends on strong leadership presence every day. The Assistant General Manager plays a critical role in translating ownership vision and General Manager direction into consistent execution across the restaurant.
We are seeking an Assistant General Manager who leads with discipline, judgment, and care for both the business and the people within it.
The Role
The Assistant General Manager is a senior operational leader responsible for supporting the General Manager in running the day-to-day business. This is a hands-on role that requires broad operational knowledge, strong people leadership, and sound decision-making under pressure.
A successful AGM understands that their job is to see the whole picture—guest experience, team performance, financial controls, and operational systems—and to step in decisively wherever needed. You are expected to lead from the floor, model standards, and maintain consistency across all shifts.
You will act as a trusted extension of the General Manager, ensuring continuity of leadership, accountability, and execution in a fast-paced, high-volume environment.
Responsibilities
Support the General Manager in overseeing daily restaurant operations
Lead shifts across FOH and BOH as needed to ensure smooth execution
Uphold service, culinary, and operational standards consistently
Coach, develop, and hold managers and hourly team members accountable
Support staffing, scheduling, and labor management
Assist with financial oversight including sales performance, labor, and costs
Manage guest experience and service recovery when necessary
Ensure policies, procedures, and systems are followed accurately
Step in as acting General Manager when required
Qualifications
Prior experience as an Assistant General Manager or equivalent leadership role in full-service dining
Strong operational instincts across both FOH and BOH
Proven ability to lead teams in high-volume, high-expectation environments
Solid understanding of labor management, service standards, and guest experience
Ability to make sound decisions quickly and calmly
Availability to work nights, weekends, and holidays as required
