The Role: Pastry Sous Chef

We are looking for a talented and passionate Pastry Sous Chef to support the Head Pastry Chef in the day-to-day running of our pastry kitchen. This is a key role within our culinary team, ideal for someone with creativity, precision, and a drive to deliver exceptional quality.

You’ll play a vital role in crafting outstanding desserts and baked goods that reflect the high standards of our estate, while supporting and mentoring the wider pastry team.

Key Responsibilities:

  • Support the Head Pastry Chef with the daily operations of the pastry section, ensuring smooth production and efficient service.
  • Oversee the preparation, production, and presentation of all pastries and desserts, maintaining high-quality standards.
  • Contribute to menu development, suggesting creative and innovative dessert ideas to excite and delight our guests.
  • Mentor and supervise junior pastry staff, fostering a collaborative and educational work environment.
  • Ensure all food safety and hygiene standards are adhered to, in line with health regulations.
  • Manage inventory and stock levels for the pastry section, ensuring only the freshest and highest-quality ingredients are used.
  • Monitor production during service hours, ensuring timely delivery of desserts and pastries.
  • Assist with the preparation of special events, banquets, and seasonal offerings, ensuring the pastry section plays a key role in these occasions.

Essentials:

  • A passion for creating exquisite, mouth-watering desserts and pastries.
  • Expertise in advanced pastry techniques and a keen eye for visual appeal.
  • Proven experience in a similar role at a high-end restaurant or hotel.
  • Strong commitment to working within a collaborative team that upholds high standards and quality.
  • In-depth knowledge of food safety regulations, modern pastry trends, and quality ingredients.
  • Ability to thrive in a fast-paced, high-pressure environment, with the resilience to work long hours and extended periods on your feet.

Desirables:

  • Experience managing large volume covers.
  • Strong interpersonal and communication skills.
  • Food Safety Training.
  • A willingness to share knowledge and continuously learn new skills.
  • A culinary degree or relevant professional certification is preferred.

Shift Patterns:

  • 45 hours per week, working 5 days out of 7, including weekends, holidays, and evenings.
  • Typical shift patterns:
    • 08:00 – 17:30
    • 13:30 – 23:00

  • Full flexibility is required, as you will be expected to adapt to the team’s and business’s needs.
