Restaurant General Manager — Jersey Mike's Subs

Pewaukee, Wisconsin · Bayview Holdings, LLC — Jersey Mike's Franchise Group (5 stores)

Run a store like you own it. Grow with a group that's growing.

Bayview Holdings owns and operates five Jersey Mike's Subs locations in the Milwaukee and Waukesha corridor, inside one of the fastest-growing brands in the country. We are hiring an experienced General Manager for our Pewaukee store — one leader, ready to take full command of a high-volume location.

We are a family-owned group, not a corporate ladder. The owners answer their own phones, know every store, and make decisions in days. If you have spent your career reporting into a regional structure and want to work where your results are seen by the people who own the business, that is what this is.

What you'll own

Full accountability for the store: its people, its customers, its food safety, its standards, and its numbers. You report to our VP of Operations and Growth, with a direct line to ownership. We expect candor in both directions.

●        Lead the team. Hire and keep dependable people. Build a real leadership team — an AGM and two or three certified full-time shift leads. Coach and correct fast and fairly. Develop at least one leader who can run the store without you.

●        Serve the customer. Friendly, accurate, fast — every order. Clean dining room, restrooms, line, and exterior at all times. Review guest feedback daily and coach from it.

●        Run the store. Opening and closing standards. Food safety without exception. Inventory, ordering, cash controls, equipment care. Audit-ready every day — not just when an inspection is expected.

●        Own the numbers. Sales and transaction trends. Labor targets. Food cost, waste, and discounts. Read your P&L and explain what caused it — and what you'll do next.

●        Protect your leadership time. We schedule it. About 15 hours a week of oversight work, on the calendar like any other shift, with the rest of your week on the line.

The benchmark we set: does your store run at a high level when you are not in it?

What we're looking for

●        3+ years as a General Manager of a high-volume restaurant. Multi-unit, area-trainer, or area-manager experience is a strong plus and changes the conversation about where this role can lead.

●        You have owned a P&L and can tell us your store's sales volume, food cost, and labor percentage from memory.

●        You have been through third-party audits — health department, brand audit, or a program like Steritech — and can describe a finding you got and what you changed because of it.

●        You have developed someone who got promoted.

●        Food-safety discipline. ServSafe certified (Proctor-level certification is a real asset here.)

●        Willing to complete Jersey Mike's certification, including brand training out of state.

●        Full-time, five days a week, including weekend days, openings, and closings — that's when the business runs hardest.

Where this leads — plainly, with no overselling

Above the store level we have three leadership seats: a VP of Operations and Growth, and two General Manager–Director roles. A GM-D runs their own store and carries a defined set of duties across all five — one owns the operating standard and the system that verifies it; the other is the field director, working store to store on coaching, audit preparation, and new-store support as we grow.

One of those two director seats is filled. The other is open, and it is earned, not given. The path is the honest one: run Pewaukee to our standard, earn your Jersey Mike's certifications, prove it over four to six months, and you can compete for it.  Full achievement in a director seat pays in the high $80s.

We put this in writing rather than hinting at it, because a growth story you can't verify isn't worth much.

What we offer

●        $70,000 – $79,500 total cash — base salary plus a monthly performance bonus tied to store results. Base is [$62,500–$67,500] depending on experience and certification status; the bonus is where the rest is earned, and it moves with store contribution. Every step and trigger is in writing before you accept.

●        Paid brand certification through the Jersey Mike's Manager in Training program, including the leadership course in New Jersey.

●        401(k) — a plan is being established now.

●        Benefits per company policy: [health contribution / PTO / meal benefit — confirm what to advertise].

Two ways to talk to us

Apply through this posting with your resume.

Or reach out confidentially to an owner. Deb Nicolosi is one of Bayview's owners, and she handles these conversations herself — not a recruiter, not a screener.

Text her first at 815-378-0408: "Hi Deb — interested in the Pewaukee GM position" is all it takes, and she'll set up a time to talk when it's convenient for you. Texting first also means she knows it's you and not another sales call. You can email [recruiting email] instead if you'd rather.

Every conversation is confidential. We will not contact your current employer, or anyone at it, without your written permission. You can talk to us for a month before anyone knows.
