Position Summary
We are seeking a visionary Sushi Chef to lead the Sushi direction of a modern Afro-Asian luxury dining concept. This role demands a sushi chef who can seamlessly blend the depth and heritage of African and Asian cuisines with refined fine dining techniques, creating a distinctive, world-class gastronomic experience. The ideal candidate is both an innovator and a storyteller, capable of translating culture into elegant, memorable cuisine.



Key Responsibilities

  • Ensure the highest level of freshness, quality, and presentation of all seafood

  • Maintain strict food safety and sanitation standards, including proper temperature control and HACCP procedures

  • Manage seafood inventory, rotation (FIFO), ordering, and waste control

  • Inspect all sushi related deliveries for quality and freshness

  • Execute service efficiently during high-volume periods while maintaining precision

  • Maintain an organized, clean, and fully stocked sushi station

  • Collaborate with the Executive Chef and leadership on seasonal features and menu development.

  • Train, mentor, and develop junior sushi chefs and kitchen staff

  • Maintain consistency in recipes, portions, and plating across every shift

  • Communicate effectively with front-of-house staff regarding menu items, guest allergies, and special requests.

  • Follow all company recipes, SOPs, and operational standards

  • Monitor food cost through proper yield management and minimal waste

  • Ensure guest satisfaction by producing visually appealing, high-quality dishes every time


Qualifications

  • Proven experience as a Sushi Chef or Senior Sushi Sous Chef in a luxury or Michelin-level fine dining environment

  • Demonstrated expertise in knife skills, fish fabrication and butchery, sushi rice preparation, seafood identification, and quality assessment

  • Exceptional leadership presence with experience building and mentoring an elite sushi team

  • Strong financial acumen, including food cost management and high-end inventory control

  • Ability to operate at a high level under pressure while maintaining precision and creativity

  • Experience with high volume 


Preferred Attributes

  • Experience creating fusion or cross-cultural tasting menus

  • Familiarity with luxury dining service styles (e.g., chef’s table, tasting menu, experiential dining)

  • Strong aesthetic sensibility for modern plating and visual storytelling

  • Global culinary exposure and a deep appreciation for cultural narratives through food

  • Established network of premium suppliers and specialty ingredient sourcing

  • Adaptable and responsive to feedback in a fast-paced, evolving environment

  • Ability to take direction from the Executive Chef and ownership while remaining collaborative
