What you’ll be doing?
As Executive Chef, you’ll lead the food operation across Mallory Court Country House Hotel & Spa, with responsibility for our 3 AA Rosette restaurant, The Warwick, alongside Sencha, our Japanese-fusion restaurant, and our weddings, meetings and events offering.
Following the launch of The Warwick in 2025, Mallory Court has entered an exciting new chapter as a dining destination in the Midlands. The restaurant has already built strong momentum, and this role offers the opportunity to build on that success - strengthening its reputation, continuing to raise standards, and bringing your own ideas and creativity to the table.
At the same time, this is very much a multi-outlet role. You’ll oversee the continued development of Sencha, ensuring its relaxed Japanese-fusion concept remains fresh and relevant for both spa guests and evening diners, while also leading our food offering across weddings, conferences, private dining and events.
You’ll take overall responsibility for kitchen performance across the hotel, balancing creativity and quality with a strong commercial focus. From menu development and food costs to payroll, stock control, labour planning and team performance, you’ll understand how to deliver an exceptional guest experience while running an efficient and successful operation.
You’ll also play a key role within the hotel’s leadership team, working closely with the General Manager and wider departments to support food sales, strengthen our local profile and ensure every outlet delivers the same high standards.
Just as importantly, you’ll create a positive and engaging kitchen culture. You’ll lead by example, develop your brigade and make sure people feel supported, challenged and proud of the food they produce.
