What you’ll be doing?

As Head Chef of our award-winning No.44 Brasserie on The Waterside you will be the key driver in delivering a creative culinary experience that you will be proud of. You will be responsible for curating and delivering through inspirational motivating leadership.  The concept is a relaxed modern British brasserie style, with a contemporary seasonal influence using the freshest and finest of ingredients.  You will have gained your skills in a similar environment and use your skillset to demonstrate innovation through creative menu design, great quality food in a modern, British brasserie environment.

What you’ll need?

The successful Head Chef will be professional, knowledgeable, and dedicated to providing Rosette Standard food.

  • You will already have gained credible experience Rosette background or high-end experience in gastropubs or High-end Casual environments.
  • A genuine passion for food and ethically sourced produce, with a pride in its delivery to the plate;
  • The ability to lead a section, and chefs in ensuring food is prepped and ready for service – great timekeeping and organisational skills are key;
  • A calm and supportive approach to development of a brigade particularly Apprentices and Commis Chef’s and to be passionate about building, developing and maintaining a talented brigade;
  • To have a fresh and relevant approach to people management, creating the very best working environment for both the brigade and in liaison with the rest of the hotel team.
  •  In-depth knowledge of Food Safety, Food Allergen and H&S best practises.
  • Ability and proven results in managing food costs, payroll controls etc
