The grill is the heart of The Bird, our boutique hotel with a bold personality, and we're looking for the chef who'll stand at it. Vibrant rooms, a sun-drenched terrace and big personalities all orbit around one thing: cooking over fire, done brilliantly. Whole fish over embers. Aged beef kissed by flame. Vegetables straight on the grate. Fresh, local and seasonal.
We're not your average restaurant, and this is not your average Head Chef job.

As Head Chef, what you'll be doing
Simple: you'll be the keeper of the flame.
The Bird Grill is yours to own, shape and grow. You'll build menus around live fire and the seasons, across breakfast, lunch, afternoon tea, dinner and the terrace, sourcing the freshest produce from the farmers and growers on our doorstep and letting the grill do what it does best. That craft is what will make The Bird Grill the reason people cross the city, and the country, to eat here.
But you're not just cooking, you're building something. We want a commercially driven chef who treats the grill like a business: controlling costs, minimising waste, and spotting the opportunities that fill seats. You'll work hand in hand with the senior team on pop-ups, collaborations, feasts and one-off fire-led experiences. Our food landscape is forever changing, and that's the fun of it.
You'll lead and inspire a brigade of chefs and kitchen porters, creating an energetic kitchen where everyone performs at their best. You'll keep every service smooth and consistent, uphold the highest food hygiene standards, and handle rotas, stock, ordering and team development alongside your fellow senior managers. Working closely with your senior managers and also the Brand Marketing team to help bring concepts to life.
Most importantly, you'll lead from the grill: hands on the tongs, face at the pass, setting the standard while remaining very much part of the action.
