ACCOUNTABILITIES

Service Delivery 

• Responsible for all food production and service across the business, ensuring a smooth operation in all food outlets 

• Working with Director of Operations and Food and Beverage Managers, be responsible for the evolvement of the Food offering, ensuring this is kept in line with both brand and hotel strategy. 

• Responsible for the delivery and evolvement of all menus across each outlet, monitoring standards and consistency in line with the Food Strategy 

• Responsible for ensuring total guest satisfaction within the Food Operation through taking an active role in evolving & developing departmental operating standards, procedures and ways of working to ensure they are focused on providing an individual service to all guests 

• Responsible for the implementation, monitoring and auditing of the departmental Standard Operating Procedures 

• Oversee and monitor the food safety programme to ensure the highest standard of cleanliness, maintenance and food hygiene in all kitchen areas 

• Responsible for promoting a problem resolution and empowerment culture; sharing feedback; proactively managing, reporting, and reacting to guest issues 

• Responsible for driving seamless communication within the department to deliver against guest expectations every time. 

People Management, Development and Training 

• Lead the team to deliver results by providing day to day direction and leadership for direct reports 

• To consistently review training needs within the departments and to work alongside the People team to provide training and development solutions for al team members from induction through to refresher training 

• Conduct regular appraisals with direct reports, setting SMART objectives and identifying people for succession and producing personal development plans to support this 

• Attract and recruit team members with the right culture and attitude, who can develop superb skills to ensure that the truly engaging hospitality is delivered each time 

• Create a supportive, fun, and creative working environment developing talent and demanding a quality and standard driven approach throughout each member of the team 

• To set and review incentives regularly for the team to ensure consistent delivery of targets and act as a tool for motivation and retention 

• Promote communication by holding regular team meetings with the department that include communicating the business direction and objectives, review business to date and encourage new ideas to drive the business forward 

• Encourage and assist team members wishing to participate in competitions and courses. 

Profit Protection 

• Responsible for ensuring the kitchen is run in a cost-efficient manner by adequate work practices, control of waste and menu planning 

• Responsible for managing departmental payroll budget through effective manpower planning, rostering and forecasting against weekly occupancy and business levels and through consistently reviewing departmental structure to ensure cost effective and efficient operational delivery 

• Responsible for maximising employee productivity using multi-skilling, multi-tasking and flexible scheduling to meet the financial budgets and targets of the hotel – whilst ensuring that customers receive fantastic food quality and service 

• Manage departmental expenses and cost of sales budgets through effective purchasing in line with sales forecasts and proactively identifying areas for cost savings • Responsible for inventory management and ongoing maintenance of operating equipment and other assets
