What You’ll Do

As a Pastry Demi Chef de Partie at The Dorchester, you will be part of a highly skilled pastry team delivering exquisite desserts and afternoon tea pastries that elevate the guest experience. Your role will focus on consistent preparation, creative execution, and maintaining the standards of one of London’s most iconic kitchens. In this role, you will:

  • Assist in the day-to-day production of the pastry section, ensuring smooth operations and timely delivery of all items.

  • Prepare pastries, desserts, and baked goods according to established recipes, maintaining standards in portion size, quality, and consistency.

  • Contribute to the creation and presentation of Afternoon Tea, working at volume while preserving attention to detail and finesse.

  • Respond to special guest requests, including bespoke items for dietary requirements, off-menu creations, and celebratory occasions.

  • Take initiative in your own development and show patience and support in training junior team members, setting an example of professionalism and care.

  • Work collaboratively with the wider kitchen team to ensure smooth service, timely plating, and high-level presentation across all pastry offerings.

What you'll bring 

Essential Skills and Experience

  • Previous experience in a professional pastry kitchen, preferably within a luxury hotel or high-end restaurant.

  • A strong foundation in pastry techniques and the ability to follow precise recipes and plating guides.

  • Ability to manage time effectively in a high-pressure environment, delivering consistent results.

  • Enthusiasm for learning, improvement, and contributing to a high-performing team.

  • Fluent in English, with the confidence to communicate clearly with colleagues across all levels.

Preferred Skills
  • Experience preparing Afternoon Tea or high-volume pastry service in a prestigious setting.

  • Familiarity with dietary considerations and the ability to adapt recipes as required.

  • Passion for presentation and a keen eye for detail in the visual execution of plated desserts.

  • Willingness to contribute ideas to seasonal menus and support continuous innovation in the pastry section.
