What you'll do
As a Chef de Partie at The Grill, you will take the lead in one of London’s most celebrated hotel kitchens, overseeing your own section with confidence and creativity. You’ll play a key role in delivering beautifully crafted dishes across breakfast, lunch, dinner, and afternoon tea, all while mentoring junior team members and contributing to the seamless operation of the kitchen. In this role, you will:
Take full responsibility for the daily food preparation of your section, ensuring all dishes are produced to the highest quality, with consistency in taste, presentation, and portioning.
Supervise and train Commis Chefs, providing guidance, support, and quality control throughout service.
Collaborate with the Senior Chef de Partie and Sous Chefs in menu planning, seasonal updates, and the introduction of new dishes.
Ensure all preparations meet outlined recipes, including costed food portions, allergen compliance, and preparation timings.
Take initiative in managing special guest requests, including dietary requirements, celebratory dishes, and bespoke off-menu offerings.
Monitor your section’s cleanliness and efficiency, upholding HACCP standards and maintaining a safe, organised working environment.
Work collaboratively with the broader team to ensure a smooth service flow and a positive, respectful kitchen culture.

What you'll bring
Essential Skills and Experience
Previous experience as a Chef de Partie or strong Demi Chef de Partie in a fine dining or luxury hotel environment.
An understanding of kitchen operations, stock control, and section management.
Proven ability to work independently and as part of a larger brigade.
Strong organisational and multitasking skills during high-volume service periods.
Knowledge of food safety, hygiene regulations, and best kitchen practices
Formal culinary education or completion of a recognised apprenticeship programme.
Experience with modern British cuisine or high-end seasonal menus.
Previous involvement in menu development, cost management, or allergen control.
Exposure to banqueting, room service, or special events catering in a luxury hotel setting.
