What you'll do
As a Senior Breakfast Chef at The Grill, you will lead the kitchen team through the earliest and most essential part of the day: breakfast service. You will oversee daily food preparation, supervise your section with confidence, and ensure every dish is delivered with precision, elegance, and flavour. Your role is vital in setting the tone for the day’s dining experience and supporting the high standards that define The Dorchester. In this role, you will:
Lead and supervise the breakfast kitchen team, coordinating with Commis Chefs and Demi Chefs de Partie to deliver a flawless service from early morning.
Take responsibility for daily mise-en-place and food production, preparing dishes that range from classic favourites to innovative breakfast specials.
Support the Junior Sous Chef or deputise in their absence, maintaining organisation, quality control, and service flow.
Collaborate in menu planning, contributing ideas that reflect seasonality, creativity, and guest feedback.
Ensure strict compliance with portion control, budgeted recipe costs, and minimising food waste.
Proactively respond to guest dietary needs and special requests, customising dishes to provide a bespoke five-star experience.
Maintain your section to the highest hygiene and food safety standards, ensuring all HACCP protocols are consistently met.
Support the training and development of junior team members, sharing your knowledge, experience, and pride in the craft.
Proven experience in a Chef de Partie or Senior Breakfast Chef role within a luxury hotel or high-end restaurant.
Strong understanding of kitchen operations, hygiene standards, and food cost control.
Ability to manage time effectively in a fast-paced, high-pressure environment.
Experience working independently during early morning shifts and confidently overseeing a section.
Previous experience in a five-star hotel breakfast service, especially with VIP or bespoke orders.
Involvement in menu development, allergen management, and sustainability initiatives.
Background in training junior chefs, supporting their growth through on-the-job mentoring.
Knowledge of modern plating techniques and international breakfast trends.
