What you'll do 

As a Sous Chef at The Grill, you will be an essential part of the culinary leadership team, supporting the Head Chef in ensuring the smooth day-to-day running of the kitchen. You’ll lead your section with confidence, uphold the highest standards in food preparation, and inspire your team to deliver excellence every service. In this role, you will: lead and supervise the breakfast kitchen team, coordinating with Commis Chefs and Demi Chefs de Partie to deliver a flawless service from early morning.

  • Oversee daily food production, ensuring all mise-en-place is prepared to the highest standard and meets the specifications for portion size, quality, and presentation.
  • Take the lead in service, providing hands-on support and supervision to ensure an efficient and seamless kitchen operation.
  • Handle special guest requests, including bespoke dishes, dietary requirements, allergen-sensitive meals, and celebratory creations.
  • Support the Head Chef with training and mentoring the kitchen brigade, fostering growth, skill development, and a positive kitchen culture.
  • Maintain rigorous compliance with health, safety, and hygiene protocols, ensuring your section is always inspection-ready.
  • Assist in monitoring food costs, portion control, and waste management to help achieve financial targets.
  • Contribute to menu development, offering creative input and helping to evolve dishes that reflect both tradition and innovation.
  • Lead by example during service and ensure that all chefs maintain a high standard of professionalism and discipline.

As a senior member of the team, your leadership and culinary expertise will be key to delivering the refined and memorable dining experience that The Grill is known for.

What you'll bring 

Essential Skills and Experience 
  • Prior experience as a Sous Chef or Senior Chef de Partie in a fine dining or luxury hotel environment.
  • In-depth understanding of kitchen operations, HACCP, and food safety standards.
  • Strong team management, timekeeping, and leadership skills, with a hands-on, lead-from-the-front style.
  • Ability to remain composed and confident under pressure during high-volume service.
Preferred Skills and Experience 
  • Experience in menu creation, cost control, and team training.
  • Passion for modern British cuisine and a desire to drive culinary innovation within a heritage setting.
  • Familiarity with luxury guest expectations and the importance of attention to detail in every dish.
  • Exposure to banqueting, events, and bespoke dining operations.
