Kitchen Manager - BRISTOL AREA

This is an exciting opportunity to join an expanding South coast Restaurant Chain. We are looking for a Kitchen manager to work in the BRISTOL area and report directly to the MD.  Project success will open up opportunities for the candidate to progress into a bigger area role.  

Responsible for the running of a satellite kitchen on a day to day basis, ensuring that the correct standards are in place.
To ensure all company policies, procedures and standards are adhered to and that the back of house operates within all relevant legal frameworks.
To ensure that the kitchen complies fully with audit standards.
To ensure staff and management appraisals and ongoing training are completed to time and in compliance both with relevant legislation and company procedures. 
To also ensure that development solutions are in place as appropriate.
To maintain staff discipline and take necessary action where appropriate – following company procedures.
To take full accountability for coaching and developing junior managers and also take a role in communicating with the team.
Responsible for managing kitchen costs, including labour, food and maintenance.
To check supplier delivery notes and highlight delivery issues.

Good eye for detail and confident working within budgetary and financial constraints.

Knowledge / skills required

 Superior leadership and food cooking skills.
Enthusiasm and commitment towards the food industry.
Previous experience at sous chef level within a kitchen.
Previous experience within a high-volume branded restaurant operation.
An acute attention to detail to all food service issues.
Sound understanding of budgeting systems, stock control, meeting budgets in relation to food, labour and maintenance costs.
An understanding of health and safety and food hygiene.
