About Langan’s Brasserie

Step into the legacy of Langan’s Brasserie – where timeless glamour, bold personality, and culinary excellence collide. Originally opened in 1976 by Peter Langan, Sir Michael Caine, and Richard Shepherd, Langan’s became the legendary haunt of stars like Elizabeth Taylor, David Hockney, and Mick Jagger.

Now reimagined under the direction of Graziano Arricale and James Hitchen, we’re bringing back the spirit, energy, and elegance that defined an era — and we want passionate, driven individuals to be part of this journey.

Location:

Stratton Street, Mayfair, London W1J 8LB

Reports To:

Sous Chef / Head Chef

Job Description

We are seeking a skilled and passionate Chef de Partie to join our dynamic kitchen brigade. You’ll be responsible for managing a section of the kitchen, ensuring consistency, precision, and quality in every dish, while upholding the standards of classic French brasserie cuisine.

Key Responsibilities

  • Take full ownership of your section (e.g., garnish, fish, meat, pastry) and ensure all mise en place is prepared to the highest standards.
  • Cook and present dishes according to the Head Chef’s direction and the restaurant’s style and recipes.
  • Maintain consistency and quality control during busy service periods.
  • Supervise and support Commis Chefs and Demi-CDPs in your section.
  • Collaborate closely with other sections to ensure smooth service and communication.
  • Uphold all food hygiene, safety, and allergen control standards (in line with UK and company regulations).
  • Monitor stock levels, assist with ordering, and reduce food waste.
  • Contribute ideas for specials, new menu items, and seasonal changes when invited.
  • Ensure your section is clean, organised, and compliant with EHO standards at all times.

Skills & Experience

  • Minimum 2 years’ experience in a professional kitchen, ideally within a high-end French or European restaurant.
  • Sound knowledge of classic French cookery techniques and presentation.
  • Ability to work under pressure in a fast-paced brigade.
  • Confident in managing a section and guiding junior staff.
  • Understanding of food safety standards (Level 2 or 3 Food Hygiene Certificate is a plus).
  • Positive attitude, reliability, and a strong work ethic.
  • Willingness to learn and contribute to a strong team culture.

Salary & Benefits

  • Salary: Competitive, typically £16 per hour (depending on experience)
  • Meals: Complimentary staff meals during shifts.
  • Uniform: Provided and laundered.
  • Staff Discount: Discounts on food & beverage across the venue.
  • Pension Scheme: Enrolment in statutory company pension.
  • Training & Development: Access to culinary training, internal progression, and development plans.
  • Employee Referral Scheme
  • Wellbeing: Mental health support and staff socials.
