REPORTS TO: Executive Chef

JOB PURPOSE: Responsible for administering the facility’s cleaning and sanitization practices and assisting with other back of house or front of house responsibilities as needed.

EXPERIENCE Previous cleaning, custodial, or dishwashing experience preferred but not required.

ESSENTIAL DUTIES AND RESPONSIBILITIES

• Sweep and mop floors.
• Clean and stock all restrooms.
• Clean and stock designated areas in the restaurant’s front of house.
• Banquet event set-up and tear down as instructed, as well as post-event cleaning processes.
• Clean and stock designated kitchen work areas and kitchen sinks.
• Detail Cambro hot food carriers, burner stoves, hood systems, as well as filter and walls near grills, steamers, smokers.
• Detail all other kitchen equipment on an as-needed basis.
• Replenish fryer oil.
• Organize restaurant supplies and equipment including shelving for trays, platters, and bowls.
• Clean out all floor drains in the kitchen, restrooms, and hallways.
• Monitor and clean outside locations, sidewalks, and entryways.
• Supplemental roles as assigned.
• Kitchen assistance including basic food preparation and production.
• Dishwashing responsibilities including washing and cleaning tableware, pots, pans, and cooking equipment.
• Front of House responsibilities including bussing and banquet service.

COMPETENCIES

• Ability to manage your time efficiently.
• Experience and skills using basic cleaning equipment and supplies.
• The ability to adhere to health and safety rules.
