We’re opening Le Café NAC, a brand-new all-day dining concept in Belgravia, and we’re looking for an exceptional Head Pastry Chef to lead our pastry team. This exciting new venue will offer French-inspired food and drinks with global influences, set in a relaxed and welcoming atmosphere in one of London’s most vibrant neighbourhoods.

Le Café NAC is the latest addition to BVC Group, which operates a portfolio of innovative, globally recognized food concepts, including NAC, Crème, 74 Duke, and Supernova. POSITION SUMMARY

As Head Pastry Chef, you will be responsible for leading the pastry team and overseeing all bakery and dessert operations at Le Café NAC. This role requires a creative and hands-on approach, ensuring that our pastry menu reflects innovation, quality, and consistency while maintaining a smooth and efficient kitchen environment.

This position demands strong leadership and a passion for mentoring a team. You will work closely with the Executive Pastry Chef to ensure operational excellence, high food standards, and a collaborative culture.

KEY RESPONSIBILITIES
  • Lead and oversee daily pastry operations, ensuring smooth service and exceptional product quality.
  • Inspire, train, and manage the pastry team, fostering a positive and professional work environment.
  • Assist in developing, refining and executing a pastry menu that showcases creativity, seasonality, and exceptional craftsmanship.
  • Ensure consistency in the preparation, execution, and presentation of all baked goods and desserts.
  • Uphold food safety, hygiene, and health & safety regulations, ensuring full compliance at all times.
  • Control stock, inventory, and ordering, minimising waste and maintaining budget targets.
  • Collaborate with the Executive Pastry Chef and Management Team to align pastry production with the restaurant’s culinary vision and business goals.
  • Implement process improvements to enhance kitchen efficiency and maintain quality standards.
KEY REQUIREMENTS
  • Pastry Leadership: Proven experience as a Head Pastry Chef or Senior Pastry Chef in a high-energy, high-volume environment.
  • Proven experience in crafting viennoiseries/lamination, cakes, tarts, and a range of baked goods is essential.
  • Team Leadership: Strong ability to mentor, train, and inspire a pastry team.
  • Operational Expertise: Knowledge of pastry production, budgeting, and inventory control.
  • Attention to Detail: A commitment to maintaining the highest standards in pastry preparation, plating, and presentation.
  • Adaptability: Ability to work in a fast-paced, high-pressure setting while maintaining excellence.
