ABOUT US
We’re opening Le Café NAC, a brand-new all-day dining concept in Belgravia, and we’re looking for an exceptional Pastry Sous Chef to support the Head Pastry Chef in leading our pastry team. This exciting new venue will offer French-inspired food and drinks with global influences, set in a relaxed and welcoming atmosphere in one of London’s most vibrant neighbourhoods.

Le Café NAC is the latest addition to BVC Group, which operates a portfolio of innovative, globally recognized food concepts, including NAC, Crème, 74 Duke, and Supernova. POSITION SUMMARY
As Pastry Sous Chef, you will support the Head Pastry Chef in overseeing all aspects of the pastry kitchen at Le Café NAC. This hands-on role requires a balance of technical skill, creativity, and leadership, ensuring the delivery of consistently high-quality baked goods and desserts.

You’ll help manage day-to-day operations, mentor junior team members, and contribute to the development of an innovative, seasonal pastry offering that reflects the concept’s culinary vision.

KEY RESPONSIBILITIES

  • Support the Head Pastry Chef in overseeing daily pastry operations, ensuring smooth service and product excellence

  • Supervise and train the pastry team, maintaining a positive, productive, and professional kitchen environment

  • Assist in the creation, development, and execution of pastries, viennoiseries, tarts, cakes, and desserts

  • Ensure consistency in quality, taste, and presentation across all pastry items

  • Uphold food hygiene, safety, and cleanliness standards at all times

  • Monitor stock levels, assist with inventory, and support in cost and waste control

  • Work collaboratively with the wider kitchen and management team to align with the venue’s standards and goals

  • Help implement and maintain efficient kitchen processes and systems

KEY REQUIREMENTS

  • Proven experience as a Pastry Sous Chef or Senior Pastry Chef in a fast-paced, quality-driven environment

  • Extensive hands-on experience in viennoiserie and laminated doughs is absolutely essential

  • Strong skills in tarts, cakes, and modern pastry techniques

  • Demonstrated ability to lead and inspire a pastry team, supporting both performance and growth

  • Solid understanding of pastry production, quality control, and kitchen organisation

  • Impeccable attention to detail and a passion for beautiful presentation

  • Ability to remain calm and efficient in high-pressure service situations
