Designate General Manager - Lead, Grow & Thrive with L’ETO

Maternity Cover (with progression to General Manager – Large Site, 2026)

Location: London
Salary: £42,000–£50,000 (DOE) + benefits

The Role

This role is designed as a genuine career pathway within L’ETO, offering the successful candidate the opportunity to grow with the business and establish themselves long‑term as a General Manager within the group.

We are looking for a Designate General Manager to join L’ETO initially to cover a maternity leave, with a clear and planned progression to General Manager of one of our larger sites in the second half of 2026.

This is an opportunity for an ambitious, commercially minded hospitality leader who is looking to embed themselves in a growing brand, build credibility at site level, and progress into a senior GM role with real scale and visibility.

During the maternity cover period, you will take ownership of an established site, working closely with senior leadership to uphold standards, performance and culture - you will then move into a supported transition and development phase, preparing to take on full responsibility for a large, high‑volume L’ETO site.

Key Responsibilities

  • Financial ownership during maternity cover period
  • Lead, inspire and develop management and front‑of‑house/back‑of‑house teams
  • Drive sales, margins and labour efficiency
  • Maintain brand standards, guest experience and operational excellence
  • Recruit, train and retain high‑performing teams
  • Work closely with senior operations on strategic planning and site development
  • Prepare for and support transition into flagship site leadership in Q3 2026

About You

  • Proven experience as a General Manager or strong Senior AGM in a high‑volume café or restaurant environment
  • Commercially astute with strong understanding of P&L, labour control and stock management
  • A confident people leader with a coaching mindset
  • Calm, organised and resilient in fast‑paced environments
  • Ambitious and motivated by long‑term progression rather than short‑term roles
