About us

The Running Horses is a food-led country inn with rooms, known for generous, seasonal cooking, a cracking Sunday roast, and warm village hospitality. We champion local produce and simple dishes done brilliantly served in a busy bar, characterful dining room, and private spaces for feasting and celebrations. We’re part of the Little & Large Pub Company, with growth, training and progression across sister venues.

The role

As Chef de Partie you’ll own your section end-to-end prep, service, standards and cleaning delivering consistent quality during busy services. You’ll support menu development, maintain food safety compliance, and help train junior chefs. This is a hands-on role for a calm, organised chef who loves fresh, seasonal food and thrives in a fast service.

Key responsibilities
  • Run a designated section to spec (larder, garnish, fish, grill or pastry) with full mise en place and service readiness.

  • Cook and plate dishes to recipe and standard, maintaining speed, quality and consistency.

  • Uphold food safety at all times (HACCP, allergen control, temperature logs, cleaning schedules).

  • Support stock management: accurate prep lists, rotation (FIFO), portion control, waste reduction.

  • Contribute ideas to seasonal menus, daily specials and feasting menus for private dining/events.

  • Train and support Commis/Junior CDPs; model professional standards and kitchen culture.

  • Maintain kitchen cleanliness and equipment care in line with EHO and company policies.

  • Communicate clearly with the pass/FOH to deliver smooth services and great guest experiences.

  • Assist with deliveries, storage, and monthly/weekly stock takes as required.

What you’ll bring
  • Proven experience as a CDP (or strong Demi ready to step up) in a fresh-food, high-volume kitchen.

  • Proud plate discipline, sharp knife skills and section ownership.

  • Solid understanding of allergens, HACCP and kitchen hygiene best practice.

  • Calm under pressure, solutions-focused, and a team player with good communication.

  • Passion for seasonal British produce and classic techniques.

  • Flexibility to work a mix of days, evenings, weekends and bank holidays.

Desirable
  • Level 2 Food Safety; Allergen Awareness certificate.

  • Experience with roasts, grills, pastry basics.

  • Knowledge of GP, yield and waste tracking.
